The spot that used to be Han Grandma’s Korean Braised Dishes has suddenly been replaced by Sei no Saku Chicken Paitan Ramen (清之作雞白湯拉麵). Actually, this ramen shop opened late last year, but I hadn’t tried it until recently, mainly because I kept seeing it crowded with people.
After trying it, I must say it’s pretty good!
Although the impressive roasted pork rib ramen is no longer available, I opted for something equally special: grilled diced beef.
Paired with pure chicken broth, this combination should be impressive enough!
The pure chicken broth is truly remarkable—it’s rich and sweet, complemented by perfectly cooked, chewy ramen noodles and chunks of diced beef with a strong beefy flavor and a hint of smokiness from the grill.
It’s a truly enjoyable experience.
The refreshing sesame bok choy on the side not only adds great flavor but also makes the meal more balanced.
While eating, I overheard someone ordering and saying, “The chicken broth is simmered longer, so it should be richer than chicken paitan, right?”
So, which is richer: chicken broth or chicken paitan?
If you have the chance to visit Zhongli SOGO (中壢SOGO) or Venice Cinema (威尼斯影城) for shopping or a movie, consider stopping by Sei no Saku Chicken Paitan Ramen for a meal!

After Han Grandma’s Korean Braised Dishes closed last year, Sei no Saku Chicken Paitan Ramen took its place.
In this bustling area, especially on weekends, this bright and lively Japanese ramen shop is always packed.
The kitchen is open but well-enclosed with acrylic panels, allowing customers to see how the ingredients are prepared while maintaining hygiene. In these times of frequent food safety concerns, this setup makes diners feel more at ease.
The menu is available before entering the dining area, and takeout orders can be placed directly here.
After grabbing a menu, you can choose your favorite seat.
Once you’ve decided what to eat and marked your order, you can proceed to order and pay.
The menu here is simple, featuring three main soup bases: pure chicken broth, chicken paitan, and spicy chicken paitan.
You can choose from four options: pork chashu, sous-vide chicken, grilled diced beef, or no meat.
There are also donburi (rice bowls) and side dishes to choose from.
Today, since I rarely see ramen shops offering pure chicken broth, I opted for the pure chicken broth with grilled diced beef ramen, paired with sesame bok choy for a balanced meal.
Additionally, if dining in, you can get a free noodle refill, but you need to request it when ordering.
This is a nice perk for dine-in customers.

After marking your order, you can place it directly at the counter inside.
If you want to adjust the noodle texture, you can inform the staff when ordering.
While ordering, I noticed that Sei no Saku Chicken Paitan Ramen is running a promotion: leave a Google review or check-in, and you’ll get a free drink.
After finishing my meal, I left a Google review and chose the cold-brewed honey black tea.
Having a cold drink after a hot bowl of ramen is incredibly refreshing!
Utensils are self-service, so you can grab them before your food arrives.
However, there are no spoons provided separately; they come with the ramen.
Pure Chicken Broth Diced Beef Ramen (清雞湯骰子牛拉麵) ＄230
The pure chicken broth is clear and light, not the yellow chicken broth we might expect.
Seeing this bowl also clarified that chicken paitan is richer than chicken broth!
The chicken broth is sweet and flavorful, with a distinct chicken taste that isn’t overpowering.
The key is that it’s not as salty as typical ramen broth, making it easy to keep sipping.
So, if you prefer a lighter flavor or enjoy drinking broth, this pure chicken broth is the perfect choice!
The addition of grilled diced beef adds a subtle smoky flavor and beefiness to the broth.
If you choose chashu or sous-vide chicken, the broth’s flavor profile would differ.

I didn’t adjust the noodle texture, and they turned out perfectly chewy and springy.
The portion is generous, especially with the added noodles.
The noodles are cooked directly in the broth, avoiding the issue of texture and flavor loss when adding noodles later.
The grilled diced beef has a strong smoky aroma and beefy flavor, but the downside is that it’s a bit tough to chew.
The amount of meat is average.
The black fungus strips and bean sprouts are light and absorb the broth’s flavor well.
This ramen truly breaks the stereotype of ramen being overly heavy.
The soft-boiled egg is also well-prepared.
Getting a whole egg is a nice touch, as many places only serve half.
Considering this bowl includes extra noodles and costs only $230, it’s a great deal.
Sesame Bok Choy (胡麻娃娃菜) ＄60
The sesame bok choy is served with the greens and sauce separate.
This is actually better, as it prevents the top from being too bland and the bottom too salty, ensuring an even flavor.
The bok choy is simply blanched, allowing its natural sweetness to shine without any unpleasant vegetable taste.
The refreshing bok choy pairs wonderfully with the fragrant sesame sauce, which is topped with white sesame seeds.
This combination creates a unique flavor profile.
The crisp bok choy, enhanced by the sesame aroma, adds layers of texture and taste.
It’s delicious no matter how you eat it, and dipping it directly into the sesame sauce is also fantastic.
Cold-Brewed Honey Black Tea (冷泡蜜香紅茶) ＄40
This cold-brewed honey black tea defies my expectations of the typical teas served at ramen shops.
It has a lovely flavor, with a subtle honey aroma that isn’t overly sweet but rather fragrant.
The black tea’s flavor follows, creating a refreshing and satisfying drink.
The entire bottle is unsweetened, but the natural sweetness of the honey black tea makes it incredibly refreshing!
Overall, I think Sei no Saku Chicken Paitan Ramen offers light and thoughtfully prepared dishes.
The prices are also very affordable.
No wonder it’s popular among shoppers, moviegoers, and even locals in the neighborhood.
Although there are many famous ramen shops nearby, like Tonkotsu Ramen (豚戈拉麵), Gokujou Ramen (極清拉麵), and Kawakatsuya Ramen (川勝家拉麵), I believe Sei no Saku Chicken Paitan Ramen is a must-try spot that shouldn’t be missed!
