Today I happened to be between Zhongshan and Shuanglian MRT stations, and suddenly remembered I've had this Niboshi Oyster Ramen Specialty Store saved on my Google Maps for so long, so I decided to queue up and try it!
Luckily today, there weren't many people in line!
I've heard some people waited two hours before, but today I got in within half an hour! So happy!
Maybe it's because it rained heavily earlier - although the rain has stopped, some people still chose to stay home.

The oyster ramen at Niboshi Oyster Ramen Specialty Store is really good.
The broth comes in shoyu and shio flavors, but neither overpowers the strong seafood taste.
If it were just made with oysters, it would probably be fishier, so I think the broth contains not just oysters but also shrimp, fish and other flavors blended together.
It really makes you feel like you're by the seaside.

Besides the oyster ramen, their chashu rice is also delicious!
And if that's not enough, the shop offers free noodle refills - you can have as many servings as you want, they're not afraid of you eating too much, only afraid you won't be full!
Very few shops dare to do this nowadays.

Overall, it's the kind of place you'd want to revisit.
No wonder it's one of Taipei's popular ramen shops.
Especially being located in the competitive food zone between Zhongshan and Shuanglian stations where people are willing to queue patiently.
They really must have something special!

I arrived around 6:30-7:00 PM, during dinner time but there weren't many people queuing.
However, the shop was already full inside and people kept coming to queue.
So how long you wait really depends on luck!

 

If you're coming, you can take Exit R7 from Zhongshan Underground Mall.

 

Walk forward a bit and you'll see it.
But since it's in a small alley rather than a main road, you might miss it!
Keep your eyes peeled.

 

When you arrive, remember to queue properly according to the rules.
No need to go inside and tell the staff - just queue behind the red line.
The staff will come out to check on you.

When it's almost your turn, the staff will guide you inside to use the ordering machine.
After ordering, you'll wait outside for seating.
The good thing is once seated, your food comes quickly, reducing waiting time since you've already waited so long.

 

The ordering machine reduces mistakes and saves time deciding at the table.

 

Niboshi has a concise menu, which helps them perfect each item!
But be careful not to order wrong!
"Oyster Ramen" contains actual oysters, while "Oyster Broth Ramen" has the broth without oysters - so if you don't eat oysters, order the latter.
Also, the raw oyster ramen is limited quantity - you'll need to come right at opening to try it!

If you really dislike oyster flavor or seafood, they also have chicken paitan shoyu ramen.

We also ordered chashu rice to share.
Actually after finishing the noodles, adding rice to the remaining broth is delicious - I wonder how many people know this way of eating?

 

When ordering ramen, you can choose noodle firmness and between medium-thin noodles or hand-kneaded noodles.
For refills, only medium-thin noodles are available, so decide when ordering.
You can also choose shoyu or shio broth - note their shio is saltier than shoyu.
Choose according to your preference.

 

After ordering, the staff will ask you to wait outside until called.
Some first-timers get confused about where to queue.
Remember to queue behind the red line before ordering!

 

Seeing people leave means it's almost our turn to eat!
So excited!

 

The storage baskets are placed behind the seats in the aisle, so it doesn't feel cramped while eating.

 

Water is available above the table for self-service, though not the traditional ice water served at ramen shops.
This is also where they place your food when served - remember to put all bowls and trash here when finished.

 

Utensils, cups and condiments are on the table.
Clear instructions for noodle refills are posted - just tell the counter staff.
Although refills are unlimited, eat according to your capacity and don't waste food.
They thoughtfully offer half-portions if you're unsure how much more you can eat.

 

Chashu Rice (叉燒飯 )NT$50

Shortly after sitting, our chashu rice arrived first.
The bowl was hot from torching, so hold the plate underneath.
The torching gave the rice an amazing caramelized aroma.

 

Generous portions of chashu - the torched mayo topping is sweet-salty with crispy texture, while the chashu underneath remains tender and springy.
Paired with sauce-coated rice, you can't help but gobble it up, enjoying the aroma and texture in your mouth.

Honestly, highly recommend ordering this.
Unexpectedly delicious.
But after seeing the ramen, I understand why - Niboshi's chashu is exceptionally well-made.
No wonder their chashu rice is so good too!

 


Rich Oyster Ramen (濃厚牡蠣拉麵) (+Egg [溏心蛋]) NT$330 (+30)

As soon as this bowl arrived, the rich seafood aroma hit.
Besides the added egg, it includes a charred onion slice, 4 chashu slices, 2 nori sheets, and today's stars - 2 Hiroshima oysters!
The green in the middle is water greens, not scallions!

 

The broth is rich - not overly fishy but full of oceanic flavors from fish, shrimp and other seafood.
Glad I chose shoyu - shio would be saltier and even more ocean-like!
Choose according to preference.

 

The Hiroshima oysters are huge and fresh.
Though cooked, they remain plump and juicy without shrinking, fully cooked through.
If you dislike raw oysters' soft texture, try these - slightly springy with less fishiness.
But I've heard truly fresh oysters shouldn't taste too strong anyway.

 

The chashu is also very tender with great aroma.
Though not torched, chewing slowly releases wonderful meaty flavors.
You can tell they make it themselves - unlike many shops that use pre-made chashu or sous vide chicken that you can instantly taste the difference.

 

The charred onion is unique - most ramen shops use chopped onions, but Niboshi serves a whole slice!
This makes the flavor stronger, and since it's raw, you still get that onion pungency even soaked in broth - consider this if you dislike raw onion.

My companion actually ordered two more slices!
How much do they love onions!

 

The egg was an add-on - a whole egg given.

 

Well...it's a soft-boiled egg.
Pretty standard, so order only if you want it.

 

Today I chose firm medium-thin noodles.
These have good chew without being too al dente, and cling well to the broth.
This rich broth is meant to coat the noodles, not for drinking!

The noodles really complement well - the shop must have carefully selected them.

 

After finishing, I intentionally left some broth and ordered a half-portion of soft noodles.
Though they said 7-8 minutes, it came in about 3.

Refills come on a plate - mix them into the broth yourself.
Oddly, these "soft" noodles felt firmer than my original "firm" noodles.
Guess the first serving is always best.
But the upside is big eaters won't leave hungry!

Even better - add a NT$20 bowl of rice to the remaining broth.
Trust me, this is absolute bliss!
Though you'll be super full.

 

After today's meal, I think:
Niboshi Oyster Ramen Specialty Store truly lives up to its reputation!
The broth, meat, star oysters and noodles are all excellent.
No thirst after eating either.
Plus unlimited noodle refills!

No wonder there are always queues.
Personally, even with just 3-4 options, I'd happily return multiple times and recommend to friends!
So I'm recommending it to you too!
